OMG Sushi baked avocado? Don't mind if I do!

Oh my goodness, this shrimp sushi baked avocado is tasty. 

This is based off an appetizer at one of our favorite restaurants, FIVE. They only list five options in each category (apps, entrees, desserts, and drinks) but they’re all absolutely exceptional. 

This isn’t exactly like the one there, but it’s still daaaaang good. 

Grab a couple avocados and let’s get to it!

Ingredients
  1. Ripe Avocado, cut in half, pitted, scooped out slightly, and salted with a pinch of salt
  2. 4 Medium shrimp, peeled and deveined
  3. 1 Strip of bacon, fried and crumbled
  4. ~1T Cream cheese
  5. Sesame oil
  6. Soy sauce
  7. Spicy Mayo
  8. Eel sauce
  9. Thinly sliced carrots
  10. Small Nori sheets
  11. Sesame seeds
Instructions
  1. Preheat oven to 400 degrees F
  2. In frying pan, cook shrimp with sesame oil and soy sauce until they're cooked through
  3. Bake halved avocados for 10 minutes
  4. Assemble avocados with bacon, shrimp, and cream cheese.
  5. Bake for an additional 5 minutes.
  6. Garnish with spicy mayo, eel sauce, carrots, Nori, and sesame seeds.
Notes
  1. Spicy mayo is simply half mayo, half Sriracha.
  2. This recipe is easy to double!

Steak Fajita Queso for your next football party!

With the football season coming to a close, it’s time to start thinking about Big Game parties and inevitably, the recipes you will make and bring to yours! In preparation, I’ve teamed up with my football blogger friends in one final collaboration to bring you some brilliant Big Game recipe ideas. It is not a health food. 

But it is delicious, and it will make you feel better about life. 

James and I were talking while I was taking pictures and I know I found my soulmate because he asked me “I don’t understand how anyone ever stops eating queso before it’s all gone.”

Needless to say, this queso dip will disappear quickly at your next party. Or you know, at your next evening in front of the TV watching the last episode of Sherlock. 

It’s perfect to serve up while watching the Playoffs or “The Big Game” (pour one out for the end of football season :()

Ingredients
  1. 1/2 Pound skirt steak, diced
  2. 1/2 Large onion, diced
  3. 1 Bell Pepper, diced
  4. 2T Butter
  5. 1 (12oz) Package white american cheese slices
  6. 1/4-1/2C milk
  7. 1t Seasoning salt
  8. 1/2t Cumin
  9. 1/4t Onion powder
Instructions
  1. Sprinkle steak with seasoning salt, set aside.
  2. Sautee onions and peppers in 1/2T of butter over low-medium heat until onions are clear and peppers are soft.
  3. Remove onions and peppers, turn up heat to medium-high, melt 1/2T of butter and sautee steak until cooked through.
  4. In a double boiler (or a pan of water with a bowl over it) combine 1/4c milk, cheese, cumin, garlic powder, and 1T butter. Stir until melted. Add more milk if you want it thinner.
  5. Stir in onions, peppers, and steak.
  6. Serve immediately with chips and/or veggies!

Whew! We’re a week into this thing… Only 51 to go! 

Although it’s been a while since I’ve posted a recipe on this blog, cooking has always been one of my favorite creative pursuits. 

This picture actually isn’t one of something I made, but of lunch the other day at Cantina! in Pepper Place, Birmingham. The light in their larger dining room was just delicious and I couldn’t help but snap a few pictures to practice food photography again.

Football season is here! In celebration, I’ve joined a group of bloggers from all over the country — all of whom are big football fans! — to bring you football-inspired recipes this season. One of the first things I learned about my husband is his love of the Tampa Bay Buccaneers. While they are in somewhat of a slump (but on the rise!) now, when he and I were kids they were unstoppable and chock full of incredibly talented players like his favorite, Warren Sapp. 

It’s no secret we’re huge college football fans around here, but as I’ve gotten more into Fantasy Football (I’m 4-0 in one league right now and 3-1 in the other!) Saturday’s football celebrations have begun to bleed over into Sunday, and even Monday. 

As you probably know, Buccaneers were the original “pirates of the Caribbean,” attacking and looting ships.

In honor of the Bucs, my love of cherry limeade, and to prevent scurvy, I present this High Seas Sour Cherry Limeade Slush!

An easy, slushy cocktail (or mocktail!) to enjoy on gameday.

Ingredients
  1. Limeade concentrate
  2. Maraschino cherries
  3. White rum (optional)
  4. Crushed ice
Instructions
  1. For each drink you want to make add 1/2 cup of crushed ice, 5 Maraschino cherries, 1 T of liquid from the cherry jar, and 1 large spoonful of frozen limeade concentrate into a blender. Blend until it reaches your desired consistency! Add 1 shot of rum per drink if so desired 🙂

I have a secret.

I love biscuits

And I LOVE Conecuh sausage.

Wait, you already knew that? My bad.

Conecuh Cheddar Drop Biscuits

But seriously, when I saw Conecuh Cheddar biscuits at a local coffee shop I knew I had to give them a try, and I’m so glad I did… Because mine were better.

For those of you unfortunate enough to have never eaten Conecuh sausage, it is a hickory smoked pork sausage, somewhat similar to andouille sausage (which you can sub if your grocery store doesn’t carry Conecuh). It’s made right here in Alabama, about 3 hours south of Birmingham in Conecuh County.

These drop biscuits whip up in no time, and have less cleanup because there’s no rolling or cutting involved. 

These are a great brunch option, or part of a heavy breakfast, or even with dinner. They are savory and satisfying, and not very diet friendly. But you should make and eat them anyway. 

Conecuh and Cheddar Drop Biscuits
Yields 12
Easy and delicious, if not diet-friendly, drop biscuits with smoked sausage and cheddar.

Ingredients
  1. 3 Links of Conecuh sausage (about a pound)
  2. 1 Cup shredded cheddar cheese
  3. 1 Stick cold butter (salted or unsalted) cut into small pieces
  4. 1 1/2 Cups all-purpose flour
  5. 2t Baking powder
  6. 1t Salt
  7. 3/4 Cup cold whole milk
Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Slice Conecuh sausage into medallions (kitchen shears are perfect for this job) and brown over medium heat in a skillet. Allow to cool slightly.
  3. Cut butter into small cubes and place in freezer so they remain as cold as possible.
  4. Combine flour, baking powder, and salt in a large bowl.
  5. Cut in cold butter until it resembles coarse meal.
  6. Mix in Conecuh and cheese.
  7. Stir in milk until all flour is just moistened.
  8. Spoon onto greased baking sheet (or Silpat)
  9. Bake for 20-25 minutes or until tops and bottoms are golden brown.
Notes
  1. These are best served warm, but they reheat beautifully in the microwave or a toaster oven.

Y’all. After nearly 8 months of waiting, it’s FINALLY football season!!! 

If you’ve followed me at all for the last several years, you’ll remember that my entire family, including my dear husband, is really big on football, and in recent years, particularly on tailgating. 

Every year we tailgate at a few games, and not only is it a wonderful way to get out in the gorgeous fall weather and spend time with our loved ones, it’s also a great excuse to create tasty dishes to share!

Between my huge family and the dozens of guests who inevitably stop by, making sure we have enough food for everyone has become embraced as a good-natured challenge. 

Because of the nature of tailgating (You’re outside all day, but no crockpots allowed!) it has been fun coming up with ways to make sure we not only have enough food, but that we can quickly and easily heat it back up on the grill.

Enter: Tailgate Tacos

You simply mix up a bunch of your preferred taco meat (I’ll show you how to make delicious chicken today!), throw it in an aluminum foil pan, throw it in the cooler with all the fixins, and heat the entire pan back up on the grill. So simple!

It’s almost summertime! In addition to the hotter, longer days, and the better traffic (commuters thank you, schools!), it’s picnic season! To kick off the summer deliciously, I’ve teamed up with 64 other bloggers to bring you some tasty recipes to try at your next summer gathering.

This quick and EASY Corn, Black Bean, and Feta Dip is tasty, easily portable (no refrigeration needed!), and did I mention easy?

Now, I have to be straight with you, I did not write this recipe. My amazing pastor Stephanie did, and she was gracious enough to share it with me when I asked.

Ingredients
  1. 2 Cans corn
  2. 2 Cans black beans
  3. 6oz Crumbled feta cheese
  4. 1 medium sweet onion, chopped
  5. 3T vegetable oil
  6. 4-6T White vinegar
  7. Salt and pepper to taste
  8. 1 Bunch cilantro, chopped (optional)
Instructions
  1. Combine all ingredients in a large bowl. Cover and allow to chill for 2 hours before serving. Serve with tortilla chips.

Every once in a while one of those recipes works its way into your life and you just know it will never leave.

You’ll keep going back to it over and over again, making it for family and friends, lunching on leftovers throughout the week (if there are any!), making a tweak here and there, but always returning to the original.

This carnitas recipe, and the tacos you can make with it are about to become one of those recipes for you.

I’m so excited to team up with my bloggy friend Sasha Johns, who is currently running a Kickstarter for her amazing wine jellies. 

In return for writing a recipe and helping her promote her KickstarterSasha provided me with three jellies—two to try, and one to give away!!

These Carnitas Tacos are insane, and makes a ton of meat! I’ve been adding it into some paleo burrito bowls all week. 

You'll want to put these crispy carnitas in everything!

Btw, did you know that soft shell tacos are really hard to take pictures of unless you have one of those fancy taco holders?

While these tacos are good on their own, the sweet boozy zing of the jelly seriously kicks it up a notch or eleven.

Tasty tacos with crisp carnitas and a boozy bonus!

Ingredients
  1. 3-4 lb Pork shoulder
  2. 2 Limes, juiced
  3. 1 Lemon, juiced
  4. 1 T Chili powder
  5. 1 t Cumin
  6. 2 t Oregano
  7. 2 T Salt
  8. 1 t Pepper
  9. 1 t Garlic powder
  10. 1 t Onion powder
  11. 1 Onion, quartered
  12. Corn tortillas
  13. Cabbage, sliced thinly (or some slaw!)
  14. 1 Avocado, sliced
  15. 3 T True Vine Gifts Sangria Jelly
  16. Queso Fresco
  17. Sour Cream
Instructions
  1. Quarter onion, place in the bottom of slow cooker with lemon and lime juices
  2. Mix together chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper in a medium bowl. Rub mixture all over pork shoulder.
  3. Place pork in slow cooker on top of onions and juices.
  4. Cook on low for 8 hours or high for 4, until pork falls apart with you try to stick a fork in it 🙂
  5. Shred pork, spread over a baking sheet, and put under the broiler for 4-6 minutes, until sizzly and slightly crisp.
  6. When ready to construct tacos, warm corn tortillas slightly either in the microwave, or over a gas burner for a few seconds to make them more pliable.
  7. Mix jelly with a little bit of water to make it more easily drizzled
  8. Build tacos using carnitas, cabbage, Sangria jelly, Sour cream, queso fresco, and a slice of avocado.

I don’t know about you, but my entire family has been counting down the days to the new Star Wars™ movie since the first trailer came out nearly a year. We’re loading up quite a few cars on premiere night and heading to the nearest movie theater (where we bought our tickets the hour they became available) to watch it as an early family Christmas present. 

Like most people in my generation, my husband and I don’t really remember a time when Star Wars™ wasn’t in our lives. The beloved series has inspired many hours of speculation, storytelling, and witty banter in my household, and one of the many reasons I knew James was “the one” soon after we met was when he subtly dropped a more obscure Star Wars™ reference during one of our first conversations. 

Needless to say, we’re pretty freaking stoked about the latest installment in the Star Wars™ universe. And where there is my family, there will also be snacks.

Star Wars™ with Honey Nut Cheerios Treat Bars
Serves 14
Marshmallowy treat bars with a dark chocolate and white chocolate side. Which side are you on?

Ingredients
  1. 6c Honey Nut Cheerios
  2. 10oz bag mini marshmallows
  3. 3T butter
  4. 1 Xoz bar Semi-sweet chocolate
  5. 1 Xoz bar White chocolate
Instructions
  1. Line a 9x9 pan with parchment paper.
  2. In the microwave or over a double-boiler, melt semi-sweet chocolate.
  3. Spread over parchment paper in pan.
  4. In large pot, melt butter and marshmallows until smooth.
  5. Stir in Honey Nut Cheerios.
  6. Pour into pan and press down over chocolate until as level as possible on top.
  7. Melt white chocolate, and spread over top of treats.
  8. Cut into bars when completely cooled and set.

Get the Whole Family Involved in Thanksgiving Dessert with Easy Pumpkin Trifle

Easy Pumpkin Trifle the whole family can make for Thanksgiving!

One of my very favorite things about slowly but surely becoming a grownup us seeing my enormous family get even larger. 

Now, 4 of the 6 siblings are married, and the nieces and nephews have started adding up! Plus, I’m getting a brand new nephew in just a few days. 

Between the delicious food, sharp chill in the air, and house full of family, Thanksgiving has always been my favorite holiday; getting to enjoy it with all the nieces and nephews makes it even more fun! 

For this Thanksgiving I wanted a budget, time, and oven space-friendly way for the kids to get involved in helping fill the dessert table with delicious goodies. 

With this idea in mind I headed to the Walmart Holiday Bake Center to pick up a few Kraft ingredients to make these Easy Pumpkin Trifles.

I snagged these darling Jet-Puffed Pumpkin Spice Mallows, some Jell-O Pumpkin Spice Flavor Instant Pudding, and a bar of Baker’s White Chocolate.

Walmart Holiday Bake Center I also picked up a box of pumpkin bread mix, some heavy whipping cream, and a bag of candy corn to round out the trifle toppings options. 

With so many smiling mouths to feed, and small hands anxious to learn how to help craft the big meal, putting together individually-sized pumpkin trifles is an easy way to get the whole family involved. 

One of the things I love about this easy dessert idea is that everyone gets their own little portion of sweetness, which definitely helps me feel better the next morning!

Another great thing about this idea is that you can make all the toppings a day ahead of time, then simply pull them out when it’s time for the kids to begin assembling them.

Easy Pumpkin Trifle the whole family can make for Thanksgiving!

Here’s how I made mine: 

Layer a couple cubes of pumpkin bread with Jet-Puffed Pumpkin Spice Mallows, Jell-O Pumpkin Spice Flavor Instant Pudding, and whipped cream. Sprinkle in candy corn along the way, if you desire, and top with Baker’s White Chocolate shavings!

Another fun idea is to make a fall candy Baker’s White Chocolate bark by melting the chocolate in a double boiler, spreading on a parchment paper-lined baking sheet, then sprinkling on candy corn, autumnal chocolate candies, or sprinkles. Once the Baker’s White Chocolate bark is cooled break it into chunks, and add it to the other topping options. 

Here’s all you need to do for the other toppings:

Ingredients
  1. Jell-O Pumpkin Spice Flavor Instant Pudding mix
  2. 4C Cold milk
  3. 2C Whipping cream
  4. 4T Granulated sugar
  5. 2t vanilla
  6. Pumpkin bread mix
  7. Baker's White Chocolate
Instructions
  1. Bake Pumpkin bread according to recipe. When completely cooled cut into 1inch cubes.
  2. In a large bowl, whisk together cold milk and Jell-O Pumpkin Spice Flavor Instant Pudding mix according to box directions.
  3. Chill metal bowl and whisk in the freezer for 10-15 minutes.
  4. Combine whipping cream, sugar, and vanilla in chilled bowl.
  5. Whisk on high until stiff peaks form.
When It's Time to Assemble
  1. Place toppings in cute bowls on an easily cleaned surface.
  2. Encourage everyone (kids included) to make their own Easy Pumpkin Trifle!
  3. Cover completed trifles with plastic wrap and stick them in the fridge until it's time for dessert.
